I would recommend extra virgin Olive Oil for salads and light cooking and baking because it is rich in antioxidants and Canola Oil for deep frying mainly because of its high smoke point meaning that it requires higher temperatures than other oils to produce smoke and harmful by-products. How does a surgeon know that? personal experience!
